Make the vanilla cream and berries:
1. Place all the ingredients except the berries in a blender and process until smooth. Transfer the mixture to a small bowl and chill in the refrigerator to thicken.
2. Place two crepes on a plate and spoon vanilla cream onto half of each crepe. Top the vanilla cream with berries and fold the crepes over.
Banana Nut Pancakes
MAKES 4–6 SERVINGS
Pancakes are a wonderful way to start the day, especially on a lazy Sunday morning. The combination of banana and pecan in this recipe is traditional and creates an almost toasty flavor. If you skip the maple syrup, these pancakes are a convenient snack to eat plain on the run. The initial stage in the dehydrator uses a higher temperature than what is usually recommended for raw food, but since the pancakes never reach that temperature, it is okay.
2 CUPS GROUND FLAXSEED
2 LARGE BANANAS, PEELED AND SLICED
1 CUP WATER
1 CUP CHOPPED PECANS
⅔ CUP UNSWEETENED SHREDDED COCONUT
⅔ CUP FLAXSEED
⅓ CUP COCONUT BUTTER, SOFTENED
⅓ CUP PURE MAPLE SYRUP, WITH EXTRA FOR TOPPING
1. Use your hands to combine all the ingredients except the maple syrup in a large bowl until well mixed. Shape the mixture into pancakes, about ½ inch thick and 5 inches in diameter.
2. Place the pancakes on dehydrator screens and dehydrate at 140 degrees F for 45 minutes. Reduce the heat to 115 degrees F and dehydrate for 30 minutes.
3. Top with maple syrup or eat plain.
